Better Late Than Never?

Note: All of the things in this blog post are from last week. When I'm not posting a day to day food journal you can pretty much bet that I've not been eating well. Such is the case this week. It amazes me how some people manage to eat healthy week in and week out. Maybe some day I'll figure it out. Until then I'm not going to get to worked up about this week. I know I've put some weight on but I also know that it'll come right off when I start upping those fruits & veggies and cut out the bread, pastries, cookies, candy, ice cream, ect...

Raspberry Cottage Pudding

A family favorite at my house is Raspberry Cottage Pudding. I'm not exactly sure why we call it "pudding". Maybe it's because we always pour milk over the cake. You can use raspberries, cherries, peaches, any fruit really, when making this. It's good hot and it's good cold. What can I say, I love the stuff!!!

Even though it already had raspberries in the cake I added more plus some strawberries.


These have gotten me into MAJOR TROUBLE this week!!!
Even though I'm eating bad I'm still getting lots of fruit in. Raspberries and blueberries especially!!!

Did I mention I made Chocolate Chocolate Chunk Muffins too(what was I thinking??!! LOL)

One of the best omelets every. Just sauteed up some spinach and filled my omelet with it. Then topped it with some cheese and bacon bits. Delish!!
So no, it hasn't been such a "healthy" week. But it's still be a happy one. I was walking through the park last night and got invited to play in a game of soccer. It was my first time playing soccer ever and I had a blast. Let me tell you though, 45 mins of running around has my body oh so sore today. Even the muscles in my feet hurt. It was a great work out though and I can't wait to do it again!!

I also have some 4th of July plans so I'm looking forward to that. And after the holiday weekend it's back to getting on track with the healthy part of my blog. :-)

wow, everything looks so good!

Love the chocolate chunk muffins!! They would have been trouble for me, too. Right along with the cookies! Why does something soooo good have to be "bad" ?:(

Raspberry pudding looks like something I could definitely get into! Oh, as do the M&M cookies ;)
